Our drinks are inspired by the trends and drinking cultures of days gone by. Using these themes as starting points, we then develop our cocktail list within our in-house lab. Here, we use rotary evaporators, sous vide, vacuum technology and a large array of enzymes, acids, proteins and hydrocolloids to create drinks that are truly unique.
We have a range of barrel and bottle age drinks in addition to our cocktails, and we also offer a barrel ageing service (ask for more details). We try to make as much of our cocktail ingredients in-house, from syrups and liqueurs to bitters and even soft-drinks. Many of the ingredients that we make and use are for sale, please ask your server for more details.

Our in house Dram Shop takes guests back to an era of compounded gin, meat pies and straw floors. In 18th-century London as many as one in four houses produced their own gin, often adulterated with the likes of turpentine oil (tasty). Fortunately our Dram Shop holds much tastier libations. The room holds up to eight guests and can be booked through our reservations system.  Upon your arrival you will be handed the key to a cabinet in the corner of the room. Inside the cabinet we have laid out a spread of some of our favourite gin based cocktails, wax sealed in glass bottles and aged for a minimum of a month each. Every bottle is dated a priced according to its contents, when you are finished, simply pay for what you have drunk! In addition to cocktails we invite you to browse our library of vintage gins, some of which are over 100 years old, and all are for sale. We have launched our own gin! In partnership with Master of Malt, we have suceeded in bottling the same Cream Gin that goes in to one of our most popular and groundbreaking cocktails, The Black Cat's Martini. It's available now from MoM website for £41.95 a bottle.
